In our Accademia you will learn the priceless lesson of how to bring to table all the flavors and aromas that arouse real emotion, and all the recipes and cooking methods that will mark you as a cook who “graduated” in Florence.
You will enter the world of raw materials, to discover the alchemy of Florentine and Tuscan cuisine, and then to explore its frequent commingling with the many other Italian and Mediterranean traditions.
You will learn to cut, peel and skin expertly, and you will understand that these are acts of meditation, like watching water boil, or oil fry. Stewing and roasting are our age-old arts, like making bread and turning good flour into pasta, fresh or dried. Cutting grain, ground and kneaded with natural yeast, into slices for soup and broth, but also to anoint our hands with fragrance.
And so you will become the anthropological mothers of an ancient art that welcomes us into the world thanks to the one who first nourished us. Completing our courses will turn you into a genuine cook, and a better person. And those who taught you will also be, at the end of the course, happier people.
Florence is an enchanted city for many, many reasons, not least the countryside around it with its grapevines, olive groves, cypress trees and orchards. And for its generous sea, only an hour away, and its lovely mountains. Tuscany is a land full of “madmen” who love a salad, an artichoke, their animals, and who embrace people from all over the world as new friends.
